Our five-course pairing dinner presents a variety of delicious ways to dine with your sweetie, your friends or your family. The courses and pairings involve a variety of our spirits, plus some of our favorite wines. Doors open at 6 p.m., and the first course will be served at 7 p.m.

SPIRITS OF LOVE PAIRING DINNER
Welcome cocktail - Rose petal infused Waterloo #9 Gin, lemon juice, simple syrup, prosecco, rose petal garnish
1st Course: Oyster east + west duo, cantaloupe orange blossom mignonette, grapefruit, uni, wasabi sauce
Wine Pairing: Pato Vinhas Velhas White (Portugal)
2nd Course: Cabbage salad roulade, wintergreens, fermented dandelions, sunflower tahini, poached egg, yaupon gin pearls
Cocktail pairing: Waterloo Old Yaupon Gin, tarragon/snap pea simple syrup, lemon juice, dry vermouth, snap pea garnish
3rd Course: Lobster bouillabaisse, saffron butter poached lobster, crispy garlic, handmade spaghetti, fresh basil
Wine Pairing: Treferhen Family Vineyard Chardonnay (Napa Valley)
4th Course: Choice of:
Smoked ribeye with foie gras
Cocktail Pairing: Ghost HIll Bourbon, blood orange juice, simple syrup, angostura bitters, spicy vanilla sugar rim with blood orange garnish
Scallops with caviar served with winter root vegetable medley, glazed carrots, roasted turnips, rutabaga, sunchoke puree, celery root chips, and root vegetable succotash bourbon maple reduction
Cocktail Pairing: Waterloo Antique Gin, lemon juice, simple syrup, Angostura and Peychauds bitters, ginger beer, mint garnish
5th Course: Choice of:
Sweet chocolate mole cake, strawberry, sweet serrano, smoked mint

Carrot cheesecake with carrot cake crumble crust and bourbon raisins
